Aspen Cornucopia’s Paula Troobnick started a small side business making Basil Vinaigrette Dressing & Marinade as a labor of love, dreaming of the day when she could turn it into a full-time business. This year she was able to do just that. Her dressing, which she describes as “summer in a bottle” is a wonderful salad dressing, great on a sandwich, and a great marinade for whatever you want to grill or bake.
Some of the dressing’s selling points are almost accidental: The dressing happens to be gluten-free, soy-free, nut-free and dairy-free, and free of genetically modified organisms (GMOs). The only sugar in it is the vinegar she uses. It’s never cooked, just blended with a cold process.
